Epic Dinner Salad Board Recipe
Here’s a fun way to serve a salad for dinner guests, with my Epic Dinner Salad Board.
And a little secret, my daughter (above) makes the best smoothies and salads :) She inspires me!

This Epic Dinner Salad Board Recipe is so versatile, all the ingredients can be swapped out with your favorite salad toppings!
Enjoy this fresh board for a lunch or dinner party! Make it vegetarian … or not (we added chicken).
Dinner salad ingredients
All you need is healthy veggies (and fruit) for the board!
- Spinach and romaine, with mixed greens.
- Cucumber, apple, bell peppers, and carrots.
- Tomatoes, Mandarin oranges, fresh blueberries, and chopped herbs.
- Avocado (for garnish and eating), and fresh quarted lemon slices.
- Candied walnuts and sliced almonds.
- A couple salad dressings (likeThousand Island dressing &Dijon vinaigrette);
- Protein: Shredded rotisserie chicken,chopped bacon andchickpeas.
- Crumbled feta or goat cheese, sliced grapes!
My favorite salad dressing?

How many guests does it serve
Everyone asks … this 28 inch board feeds anywhere from 12-24 guests. But it’s no longer availabe (for a few years now) which is why we came out with our own line of boards. The largest is 26-inches! Grab the info below.
Think about whether you’re serving off of this board for an appetizer, and then it could easily feed 24.
But if it’s a dinner board, the most would be 12.
If it’s a side salad (like this recipe), then it could be 10-12? It really comes down to portion size!
Enjoying nature
Enjoying time in nature is something I want to do more of this year. Yes, we live in the most glorious place in the world, with over 300 days of sunshine. No joke, the skies are so blue, it’s contagious.

Ingredients
- 5 c spinach
- 3-4 heads romaine
- 5 c mixed greens
- 1/2 English cucumber, sliced
- 1 honey crisp apple, sliced
- 8-10 bell peppers
- 1 c shredded carrot
- 1 c cherry tomatoes
- 1 small can Mandarin oranges
- 1 c blueberries
- 1/2 c chopped herbs, mint, cilantro, or parsley
- 1 avocado
- 1/2 c candied walnuts
- 1/2 c sliced almonds
- 3/4 c Thousand Island dressing
- 3/4 cup Dijon vinaigrette
- 2 c shredded rotisserie chicken
- 1/2 c chopped bacon
- 1 can chickpeas
- 1/2 c crumbled feta or goat cheese
- 1/2 c crumbled blue cheese
- 1 c sliced grapes
- 4 radishes, sliced
- Lemon to garnish
Instructions
On a large prepared board, place the side ingredients in small bowls and place on the board. Place 1-2 salad dressings in small bowls.
Fill in the open areas with chopped lettuce, adding radish, cucumber, and peppers.
Garnish with a whole avocado and fresh quartered lemon.
