There is so much to love about this authentic recipe! Anytime I see dates in a recipe, my ears perk up. In my youth, there wasn’t a car trip to Palm Dessert when my dad didn’t stop for his date shakes near Hadley’s Date Gardens. It’s part of my childhood.

Here’s what I love about these Rice Bubble Slice snacks:

I originally received this recipe in a recent email exchange with Elizabeth, with permission to share it with you. My updated recipe and step-by-step instructions are in the post’s recipe card at the bottom.

This Rice Bubble Slice recipe is one she has made for her kids’ lunchboxes and a treat she says the elders love too!

Rice Bubble Slice Ingredients

  • 4 ounces chopped dates
  • 4 ounces butter
  • 4 ounces sugar
  • 4 cups rice bubbles

How to Make Rice Bubble Slice (Date Rice Krispies Treats)

Step-by-step instructions are in the recipe card below. Here’s a quick overview of how to make these delicious treats:

For easy removal, begin by lining a square pan (8×8 inch or 9×9 inch) with parchment paper. Add the cereal to a large bowl and then in a saucepan, bring dates, butter, sugar, and maple syrup (or honey) to a boil, and simmer until thickened.

Stir in the vanilla and pinch of salt before pouring the mixture over the rice krispies and combine.

Press mixture into a parchment lined pan and let cool until set before cutting into servings.

You will need a square pan for this recipe. I’ve tested it using both a 8-inch square pan and a 9-inch square pan (affiliate link). Both work great; the only difference is the height of the finished treat.

I like to line the pan with parchment for easy removal. You can also use a layer of parchment to help smooth the top when transferring the warm treats into the prepared baking pan. This helps to create an even and smooth top. But a spatula works great too.

You will need a medium size saucepan and a heat-proof spatula or spoon for cooking the date mixture.

Ingredients

  • 4 cups rice krispies (in Australia, they're called Rice Bubbles)
  • 4 ounces dates chopped
  • 3/4 cup granulated sugar
  • 1/2 cup butter
  • 1/4 cup maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • pinch salt

Instructions

  • Add cereal to a large bowl and set aside.

  • Combine the chopped dates, sugar, butter, maple syrup, and vanilla extract in a medium saucepan over medium heat. Bring the mixture to a boil and then reduce to a simmer. Continue to cook until the dates are soft and the mixture is slighty thickened; about 2 to 2 1/2 minutes.

  • Remove from the heat and add the vanilla and a pinch of salt.

  • Pour the mixture over the rice bubbles (rice krispies) and stir until they are evenly coated. Press the mixture into the prepared pan and smooth to an even layer with a spatula or a layer of parchment paper.

  • Let sit at room temperature for about 30 minutes or until cool and set. You can also refrigerate the treats for quicker cooling. Slice into squares with a sharp knife.
